This Grass-Fed Filet Mignon With Gluten-Free Crispy Onions in Truffle Oil Takes 30 Minutes to Come Together

Preheat oven to 400° F.

Put almond meal and olive oil in two separate shallow dishes; set aside.

Dip each onion in the oil dish and then into the almond meal dish. Place each coated onion onto a baking pan. Sprinkle with salt and pepper. Sprinkle any remaining almond meal evenly over the onions; press gently to adhere.

Bake 25 minutes, or until onions are golden brown and crispy or until desired degree of doneness.

Drizzle steaks with olive oil, set aside. Heat a grill pan or fire up the grill at medium-high heat. Season meat with sea salt and pepper, place on grill or in pan and reduce heat to medium. Cook 6 to 7 minutes per side for medium-rare to medium.

Transfer steaks to a plate and then rub grass-fed butter on top of steaks. Cover steaks with foil and allow 5 minutes to rest and marinate. Unwrap steaks and slice thinly across the grain and serve on a bed of greens. Drizzle steak with a few drops of truffle oil. Remove onions from oven, then top steaks with onions and drizzle with a few more drops of truffle and olive oil, if desired.
