My 12-minute garlic halibut with arugula salad is one of my go-to favorite quick and fresh recipes to keep you rocking your summer health and fitness goals. 12-Minute Garlic Butter Halibut
- 2 halibut fillets
- sea salt
- 1 teaspoon pepper
- Himalayan pink salt
- 4 tablespoons butter and 2 one-tablespoon pats of butter
- ¼ cup minced garlic
- juice of 1 lemon
Preheat broiler to high.
Set halibut fillets on a baking sheet or in an oven-safe dish. Sprinkle halibut with salt and pepper. Add small pats of butter underneath halibut fillets. Place in oven and cook until fish is opaque and white, about 12 minutes.
In a large pan, add 4 teaspoons butter and garlic, cook on medium-low heat, stirring occasionally to prevent burning.
After 8 minutes of cooking, add butter and garlic from pan to halibut, drizzling over fillets. Remove and serve immediately with a squeeze of lemon. Enjoy this melt-in-your-mouth dish!

- 1 bag arugula
- 2 tablespoons extra-virgin olive oil
- ½ cup pine nuts
- ½ cup grape or cherry tomatoes
- ¼ cup Parmesan cheese
- squeeze of 1 lemon (optional)
Combine all ingredients in a large salad bowl and serve.
