Good Oils, Bad Oils

If you love your fried chicken or French fries, don’t cook them in corn oil or sunflower oil. Use olive oil, coconut oil, butter or even an animal fat such as lard. Scientists from Montfort University in Leicester, UK found that cooking in vegetable oils resulted in high concentrations of toxic aldehydes in the food. These are chemicals which have been linked to everything from cancer to heart disease. Aldehyde levels in a meal of fish and chips cooked in vegetable oil were up to 200 times more than the limit regarded as safe by World Health Organization. But if that same meal were cooked in olive oil, butter or lard the levels were much lower, with coconut oil producing the lowest amount of toxins.
